Ingredients

  • 1 1/4 cups water

  • Coarse salt, to taste

  • 3/4 cup bulgur wheat

  • 8 ounces watermelon, peeled and coarsely chopped (about 1 1/2 cups)

  • 2/3 cup coarsely chopped fresh flat-leaf parsley

  • 2 scallions, thinly sliced on the bias

  • 1 tablespoon plus 1 teaspoon extra-virgin olive oil

  • 2 teaspoons finely grated lemon zest, plus 2 tablespoons fresh lemon juice

  • 2 ounces soft goat cheese, crumbled

Directions

  • Cook the Bulgur: In a medium saucepan, bring 1 1/4 cups of water and a pinch of salt to a boil. Stir in the bulgur wheat, cover, and remove from heat. Let it sit for about 20 minutes, or until the bulgur has absorbed the water and is tender. Fluff with a fork and set aside to cool.
  • Prepare the Dressing: In a small bowl, whisk together the extra-virgin olive oil, lemon zest, and lemon juice. Season with coarse salt to taste.
  • Assemble the Salad: In a large mixing bowl, combine the cooked bulgur wheat, chopped watermelon, parsley, and scallions. Drizzle the lemon dressing over the mixture and toss gently to combine.
  • Add Goat Cheese: Gently fold in the crumbled goat cheese, making sure not to overmix to maintain the creamy texture.
