Ingredients

  • 1 14-ounce block soft tofu, quartered

  • 1 teaspoon vegetable oil

  • 4 ounces sugar snap peas, thinly sliced

  • 2 scallions, thinly sliced (whites and greens separated)

  • 1/2 teaspoon red pepper flakes

  • 1 tablespoon sesame seeds

  • 1 small clove garlic, minced

  • 1 1/2 teaspoons sesame oil

  • 1 1/2 tablespoons reduced-sodium soy sauce

  • 1/2 teaspoon cane sugar

Directions

  • Heat vegetable oil in a skillet over medium heat. Add the tofu quarters and cook for about 3-4 minutes per side until lightly browned. Remove from the pan and set aside.
  • In the same skillet, add the sugar snap peas, scallion whites, and red pepper flakes. Sauté for 3-4 minutes until the snap peas are crisp-tender.
  • Stir in the garlic and sesame seeds, cooking for another minute.
  • Add the sesame oil, soy sauce, and cane sugar to the skillet, stirring to combine.
  • Return the tofu to the skillet, gently tossing to coat with the sauce.
  • Remove from heat, garnish with scallion greens, and serve immediately.
