  • 2 tablespoons sherry vinegar

  • 3 tablespoons extra virgin olive oil

  • Coarse salt and freshly ground pepper to taste

  • 2 hearts of romaine, cut into bite-size pieces

  • 3 parsnips (about 8 ounces), peeled and shaved very thinly (on a mandolin or with a vegetable peeler)

  • 4 medjool or 6 regular dates, pitted and cut into 1/2 inch pieces

Directions

  • In a small bowl, whisk together the sherry vinegar and extra virgin olive oil. Season with coarse salt and freshly ground pepper to taste.
  • In a large salad bowl, toss the romaine lettuce with the shaved parsnips and chopped dates.
  • Drizzle the vinegar and olive oil dressing over the salad and toss gently to coat all the ingredients evenly.
  • Adjust seasoning with more salt and pepper if needed. Serve immediately for the freshest flavor.
