Ingredients

  • 1 can (15 ounces) pinto beans, rinsed and drained

  • 1 tablespoon red-wine vinegar

  • 2 tablespoons olive oil, plus more for drizzling (optional)

  • 1 small garlic clove

  • 1/2 teaspoon ground coriander

  • 1/2 teaspoon paprika, plus more for garnish

  • 1/8 teaspoon cayenne pepper

  • Coarse salt and ground pepper, to taste

  • Flatbread crackers, for serving

Directions

  • In a food processor, combine the pinto beans, red-wine vinegar, olive oil, garlic, coriander, paprika, cayenne pepper, and a pinch of coarse salt and pepper.
  • Blend the mixture until smooth, scraping down the sides of the bowl as needed. If the dip is too thick, add a tablespoon of water to reach your desired consistency.
  • Taste and adjust the seasoning with more salt, pepper, or vinegar, if needed.
  • Transfer the dip to a serving bowl, drizzle with extra olive oil, and sprinkle with a dash of paprika for garnish.
  • Serve with flatbread crackers for dipping.
