Ingredients

  • 1 cup chopped fresh pineapple (about 1/2 pineapple)

  • 1 cup chopped fresh mango or 3 ripe Fuyu persimmons, stemmed and chopped

  • 1-2 tablespoons honey (adjust to taste)

Directions

  • Preheat your oven to 140°F (or use a dehydrator if available).
  • In a blender, puree the pineapple and mango (or persimmons) until smooth.
  • Taste the puree and add honey as needed for sweetness. Blend again to combine.
  • Line a baking sheet with parchment paper or a silicone baking mat. Pour the fruit puree onto the sheet and spread it evenly, about 1/8-inch thick.
  • Place the baking sheet in the oven for 4-6 hours, checking periodically. The fruit leather should be dry but still pliable when done.
  • Once dried, remove from the oven and let it cool completely. Cut into strips or roll it up in the parchment paper for easy storage.
