Ingredients

  • 1 pound whole-wheat Italian bread, cut into 1-inch pieces

  • 3/4 cup walnuts, coarsely chopped

  • 2/3 cup dried cranberries

  • 1 tablespoon olive oil

  • 1 small onion, finely chopped

  • 1 medium celery stalk with leaves, chopped fine (about 1/2 cup)

  • 8 ounces of shiitake mushrooms, cleaned, stems removed, and caps chopped

  • 1 Granny Smith apple, cored and diced

  • 1/3 cup fresh parsley leaves, minced

  • 1 tablespoon fresh sage leaves, minced

  • 1 tablespoon fresh thyme leaves, minced

  • Coarse salt and ground pepper

  • 3 cups reduced-sodium chicken broth (you may not need to use it all)

  • Olive oil spray (optional)

Directions

  • Preheat your oven to 350°F (175°C). Spread the whole-wheat bread pieces on a baking sheet and toast in the oven for about 10-12 minutes, until crisp and golden. Transfer to a large bowl.
  • In a skillet, heat olive oil over medium heat. Add the onion, celery, and shiitake mushrooms, cooking until softened, about 5 minutes.
  • Stir in the apple, parsley, sage, and thyme, cooking for another 2-3 minutes. Season with coarse salt and ground pepper.
  • Add the dried cranberries and walnuts to the bowl with the toasted bread. Pour in the mushroom mixture and gently toss everything together.
  • Gradually add chicken broth (you may not need all 3 cups), stirring until the bread is moist but not soggy.
  • Transfer the stuffing mixture to a lightly greased baking dish and cover with foil.
  • Bake for 25-30 minutes. If you like a crispier top, remove the foil during the last 10 minutes of baking.
  • Serve hot, and enjoy!
