2 leeks, halved lengthwise, thinly sliced and rinsed

1 garlic clove, minced
1 pound assorted fresh mushrooms (white button, cremini, oyster, shiitake), stemmed, rinsed, and chopped
1/2 teaspoon fennel seeds
2 bay leaves
1 tablespoon tomato paste
1 can (14 1/2 ounces) diced tomatoes, drained
1/2 cup marsala wine (optional)
4 cups vegetable broth
Directions
- In a small bowl, soak the dried porcini mushrooms in 1 cup of hot water for about 20 minutes. Once softened, drain the mushrooms (reserving the soaking liquid) and chop them finely.
- In a large pot, heat the olive oil over medium heat. Add the leeks and season with salt and pepper. Cook for about 5 minutes, until softened.
- Add the minced garlic, fresh mushrooms, fennel seeds, and bay leaves. Cook for another 5-7 minutes, stirring occasionally, until the mushrooms release their juices.
- Stir in the tomato paste, diced tomatoes, and the chopped porcini mushrooms. If using, pour in the marsala wine and cook for 2-3 minutes to let the alcohol evaporate.
- Add the vegetable broth and the reserved porcini soaking liquid (strain it to remove any grit). Bring the soup to a boil, then reduce the heat to low and simmer for 25-30 minutes, allowing the flavors to meld together.
